Pendergast’s officially opens its doors to diners

WARRINGTON’S premium, new steakhouse Pendergast’s is now open to the public after an initial soft launch, a series of friends and family nights and an exclusive public event with the relaxed vibe and exceptional menu going down a storm with local diners.

Open from 12 noon Wednesday through to Sunday, with late closing on Fridays and Saturdays (12.30am) and situated in the Hive WA1 development in Warrington’s cultural quarter, the new venue is an elegant, casual alternative to traditional steakhouse dining.
It offers premium wines, signature cocktails and a range of delectable small plates and vegan alternatives, alongside some of the best steaks in the region, cooked to perfection by a brand-new kitchen team.
From T bone to fillets and rump steaks to Sunday roasts, Pendergast’s extensive selection of cuts i proving a magnet for meat lovers (additional prestige cuts are also available for pre-order – subject to availability).

“Initial feedback has been brilliant. Really positive,” says Laura Harvey, hospitality consultant and one of the creative, business minds driving the new venture, who has also overseen the venue’s interior design.
“The opening party was a huge success with a flurry of bookings and the private dining space being in popular demand.
“I’d have the say the Signature Cocktails have been the most popular thing on the drinks’ menu so far, along with the excellent selection of wines. Guests have been loving the creativity and interactive experience some of our cocktails offer, particularly the Zen Garden, which comes complete with edible sand and pebbles.

“When it comes to the food, our head chef has curated a tantalising menu that we’re really proud of. The focus is on relaxed, social dining and the food on both the menu and the deli counter showcases the amazing produce that the north west has to offer. We think the menu speaks for itself – there’s something for everyone, so it’s hard to pinpoint what’s going to be the diners’ favourite. Aside from the steaks of course.
“Prime cuts of steak are our specialty with guests being able to choose from a range of cuts and learn all about where the meat has come from. Other dishes include Argentinian jumbo prawns on sourdough toast with chilli and garlic, smashed roasties with beer cheese dip and baked heritage beets with maple and mustard dressing. We also have a wide choice of dishes for vegans, vegetarians, non-red-meat eaters, or just those who prefer a lighter meal too.
“We’ve put a lot of effort and resource into sourcing really top-quality products which shines through in the cooking.”

During the day, Pendergast’s aims to act as a hub for local business lunches and daytime networking. For those who want a little more privacy, the venue offers its eight-seat private dining space with no charge when ordering from the menu during the day.
Talking of the plans for Pendergast’s manager Stevie Shepperson, who is also part of the Pendergast’s development team, said “A huge amount of effort has gone into creating a stylish and versatile space that’s ideal for business and pleasure. We have worked really hard to bring a fresh perspective to the high-end steakhouse concept, one that is built on outstanding food and wines in beautiful surroundings. We think that’s going to be really attractive to local business clientele, and the fact that we support independent businesses is really important too.”
The dining hotspot, which aims to bring a feminine touch the traditional steakhouse ideal, has also revealed more about the local businesses it will be working with.
A key aim for the owners and the management team as an independent business is to incorporate local ingredients and products on to the menu and use smaller, local suppliers where possible, to support the region’s independent business network. Some of the wines, cheeses, gins and other products featured will also be available to buy onsite.

Turncoat Distillery
An independent small batch distillery, pushing boundaries on innovation and product curation. Based in the heart of Liverpool’s creative sector, The Baltic Triangle, the brand’s exciting core product portfolio has been refined over the past 7 years with four unique gins in the collection. These include citrus forward Sicilian Lemon, London Dry with notes of Gentian and Angelica Root, the hopped and spicy Cascade and a unique take on Pink gin, with all the signature colour coming from fresh fruit.
Think Wine
Think Wine is a UK-based multi-award-winning company. The company’s wines are made from Italy in the finest Treviso grapes. All of the wines are 100% vegan and organic.
Lost Barn Coffee
The Lost Barn is a micro-roastery located in the Cheshire countryside. Lost Barn uses a hardworking copper coffee roaster and a skilled team which is passionate about ethically sourcing top-quality beans and meticulously roasting them in small batches.
Dolton Woods
Rob Dolton from Dolton Wood is a passionate and talented chainsaw artist. Examples of his work can be seen at Pendergast’s and will be on sale for patrons.
CA Interior Designs
Providing creative interiors to private clients and the hospitality sector, Caroline Ascroft is also a fantastic mural artist who is committed to delivering bespoke innovative designs for all her clients.  She has created bespoke designs for garden centres, gyms, offices, golf & football clubs, as well as restaurants. Two of Caroline’s bespoke murals feature in Pendergast’s.

Pendergast’s steakhouse, grill and bar in Warrington is the first and flagship restaurant for the team, which if successful could be replicated in other developing towns and cities.
